Cascabel chile peppers are also known as 'rattle peppers', due to the fact that when dried the seeds become loose and rattle when the pepper is shaken. Cascabels are moderately hot and have a nutty flavor and slightly smoky flavor. Typically the the chile is used in salsas, sauces, soups and stews.
